Skillet Chicken with Apples & Maple Glaze
Ingredients
2 pounds skin-on, bone-in chicken breasts, cut into large chunks
Kosher salt
2 tablespoons extra-virgin olive oil
2 apples (1 red, 1 green), cored and cut into wedges
8 medium shallots, quartered lengthwise
1/4 cup fresh sage leaves, torn
1/2 cup low-sodium chicken broth
1/4 cup pure maple syrup
1/4 cup apple cider vinegar
Directions
- Prep the Chicken: Pat the chicken dry and season with salt.
- Sear the Chicken: Heat olive oil in a large heavy skillet over high heat. Place the chicken skin-side down and cook undisturbed for about 5 minutes until the skin is browned and crisp.
- Add Flavor: Flip the chicken and add apples, shallots, and sage to the skillet. Reduce heat to medium-high and cook for another 4-5 minutes until the bottom is browned. Remove the chicken and set it aside.
- Caramelize the Apples & Shallots: Continue cooking the apples and shallots, stirring occasionally, until golden, about 2 minutes.
- Make the Glaze: In a small bowl, mix chicken broth, maple syrup, vinegar, and ½ teaspoon salt. Pour the mixture into the skillet with the apples and shallots. Let it boil and reduce by about three-quarters, 2-3 minutes.
- Finish Cooking: Return the chicken to the skillet, turning to coat in the glaze. Cook for about 2 more minutes until fully cooked through.
